SME Interview with Matthew Cunningham , General Manager at Tribeca Tavern in Cary, NC

  1. Tell me a little bit about Tribeca Tavern. When it was established, the number of locations and who are the target customers.

Tribeca Tavern has been around in its current iteration for three years. The restaurant itself has been around for about seven or eight. We do locally sourced, homegrown, made from scratch burgers and things that go well with burgers. We do a lot of really good North Carolina seafood. We grind our own burgers. We own a brewery, which is the Mash House Brewery in Fayetteville. So those are our two primary locations. We also have a food truck, which just launched this fall, and a catering company that focuses primarily on weddings.

Interview with Ryan Libert, General Manager of Tazza Kitchen Restaurant in Cary, NC

1.  Tell me a little bit about Tazza Kitchen restaurant: when was it established, the number of locations, and who are the target customers?

We grew out of another concept. Our first location was launched in Richmond under the Tazza brand and that was four years ago. From there, we opened up a location in Raleigh and then in Columbia, South Carolina and another in Richmond. And then this is the most recent build out of Tazza Kitchen. We’ll be opening up our sixth location next month in Richmond.

Interview with Chris Beal, Director of Operations at Tribeca Tavern in Cary, NC

1. How was the Tribeca’s management team assembled?

It was assembled by finding a certain fit for our different needs. So, our main goal is to create a team that works together and to create a team that has different passions for different things, so it can all come together to create a great thing. With our chef, we look for creativity and ability to multitask, be able to handle the volume. For our Sous Chef, we look for someone who will understand the importance of cleanliness, employee relations with each other, and building a kitchen team, and the ability to be able to prep.

We have the bar manager who has a true passion for alcohol and the different liquors, bourbon, and craft beer. And we have a general manager who is really the base of the team in pulling everyone together, and they’re different from the house managers to ensure the success of the service experience.
